Baked Zucchini Cakes

3 cups grated zucchini (let drain for 15-30 minutes)
1 large beaten egg
2 tablespoons olive oil

1.25 – 1.5 cups bread crumbs (can use crushed crackers too)
1/4 cup minced onion
1.5 teaspoon Old Bay

1/4 cup all-purpose flour
2 tablespoons corn meal

1. Preheat oven to 425 and oil a cookie sheet well.

2. In a large bowl, combine zucchini, egg and oil.

3. Add 1.25 cups of bread crumbs, minced onion and seasoning. Mix well. (If too soggy add .25 cup more crumbs, but don’t make too stiff or they will get hard.)

4. On a deep plate whisk together flour & corn meal.

5. Shape zucchini mixture into 8 – 10 patties. Do not flatten too much. Dredge in flour mixture.

6. Bake for 15 minutes and turn patties. Bake for another 15 minutes, or until golden brown.

Came out super yum! New favorite, not to mention I love playing with my food processor.

I bet I could make 16-24 mini patties and serve these up along with falafel balls in pita’s with cucumber yogurt sauce. Nommmmmmmmmmmmmmmmmmmm
