Today got off to an interesting start.

Oh my, can we say comedy of errors?

I was only 25 minutes late for work and it wasn’t the end of the world. Especially since the boss is away.

Ryne didn’t get to bed until 10:30 (2.5 hours late) so he didn’t want to get up. Had to shove him into his clothes when he was groggy from sleep.

Couldn’t find his bigger back pack. I think it’s in the back of Rob’s car.

Got to J’s house and couldn’t get the danged seat to open up, so we could put I’s booster seat in.

Hit every single red light leaving New London.

Got Ryne and I to Terra Firma Farm just 7 minutes late, wanted to be 10 – 15 minutes early.

Once I got Ryne to stop clinging, was back on road to work. Of course, not only did I take the long way, I got turned around. Sigh.

Stopped at a convenience store for half and half, will have to get my yogurt and healthy munchies another day.

Oh yeah, I started this all out by being too lazy to get moving to do my yoga. Bad, bad me.

It’s decided mermaid is going to be the first tattoo. Just need to get my ass to the tattooist.

Penne with Zucchini, Mozzarella and Eggs
– makes 4 servings –

Ingredients
1 pound penne
2 pounds zucchini
5 ounces olive oil
2 ounces parmesan, grated
8 ounces mozzarella, cubed
2 eggs
Salt and pepper

Procedure
1. Slice the zucchini into 1/4 inch rounds.

2. Pour the oil into a frying pan and heat to medium. Fry the zucchini for a few minutes until bright green and just soft. Transfer the pieces to a paper towel to drain and salt them. Keep the oil.

3. Bring a large pot of water to a boil. Add the penne and cook for however long the box says.

4. When the pasta is cooked, quickly drain, and then dump back in the empty pasta pot. Dump in the mozzarella and stir until the cheese starts to cover the pasta. Crack in the eggs and add the zucchini. Stir until incorporated. Add a tablespoon or so of the leftover olive oil if needed. Then dump in the grated cheese, and season with salt and pepper.
