Still rambling

This will be the continued ramble for the day. The catch all entry that will collect all the interesting bits I find on the net and think during the day.


Homemade Tagalongs (a.k.a. Peanut Butter Patties) Cookies


Lentils and Potatoes with Curry ganked from wishuponakate who got it from pettybeige

1 cup dried brown lentils, washed and picked over
1 can of coconut milk, + 1/2 can of water
1 tablespoon curry powder
2 medium russet potatoes, peeled and cut into large chunks
1-2 tablespoon butter or margarine
Salt n pepper

1. Combine lentils, liquid, and curry in a medium saucepan and bring to a boil over medium-high heat. Turn the heat down to medium-low so that the mixture bubbles gently, cover partially, and cook, stirring occasionally, until the lentils start to absorb the water a bit (about 15 min).

2. Add the potatoes and margarine and cover the pan completely. Cook, undisturbed, for 10 minutes or so, then stir gently to make sure the lentils aren’t too dry. If so, add a little more water. Add salt as the lentils become tender.

3. Cover and continue cooking until the lentils are soft and beginning to turn to mush and the potatoes are tender at the center. Add more liquid if necessary. The mixture should be moist but not soupy. Add lots of black pepper, then taste and adjust the seasoning if necessary.

My fridge is packed (and white board on the front updated). It’s never that full without a holiday being around the corner. Rob and I went shopping and we did such a good job sticking to the list we stayed in budget, since I am not including suppliments (B12, Mg & Melatonin) or canisters in the total. Even with that we only went $40 over. Anyhoo, the meals for the next two weeks are going to rock even if we end up eating at 7:00, when I cook. The down side of coming home after six.


And what is up with all my bloggy friends showing pictures of snow? I live in New England dammit and I haven’t been snowshoeing once this year. Not that I currently own snowshoes, but that is completely besides the point.

    You should definitely do the list. I have knocked a few new things off my 101/1001 list today, since last week I did next to nothing.
